Taiwanese artist Lo Senhao made use of pickled vegetables and 90 ceramic pots to create a piece of installation art, on display at the German Cultural Center in Taipei in December 2004. The artist is also calling for writings on pickled vegetables which intends to explore their social significance, because in the artist's own words, 'Pickles were once very important and significant foodstuff in Taiwan. People ate them all year round, and, when times were hard, pao cai was often the only form of nourishment families could afford to eat. Everyone has memories of eating pickles, and because of this I think the social significance of pickled vegetables is next to none'.
